Description
This roe is also taken from Russian sturgeon (A. Gueldenstaedtii), although it is dark brown to black in color due to its origin. In terms of taste, however, it does not stand out so much from the Oscietra Imperial, although it is not only connoisseurs who recognize the subtle nuances. The differences are particularly noticeable when tasting the two Oscietra varieties side by side.
