Description
Beluga caviar is certainly by far the finest caviar. Its highlights are its very large grain (around 3.5 – 4 mm) and its unique creamy touch, which is appreciated by caviar lovers all over the world. Typical Beluga caviar shimmers steel-grey and is by no means black, although gradations from light grey to anthracite are of course possible due to the whims of nature and are by no means a negative sign of quality.
The precious roe of the beluga sturgeon is usually only removed from the fish after around 20 years in order to achieve the best possible result. This must be done very carefully so as not to damage the delicate roe – because the membrane of the individual eggs is very sensitive and bursts very easily.
